Our recommendation is the "Kinmedai no Shabu Shabu" (sea bream shabu-shabu), a dish for which we pay particular attention to the broth.
For the broth, we use the ara of sea bream that we purchase from Toyosu every morning to extract the rich flavor.
The dish is a one-pot meal of all kinds of sea bream, with the meat of the sea bream so fresh that it can be eaten as sashimi, shabu-shabu.
You can enjoy the shabu shabu shabu of sea bream not only as a single dish but also as a course meal.
